The Almond French Toast
Serves 3
What You Need
- Eggs 2
- Salt ¼ teaspoon or to taste
- Cinnamon ½ teaspoon
- Almond milk 2/3 cup
- Bread slices 6 (preferably a day old)
How to Make It
- Heat your skillet. Keep the flame medium high. Add some butter and allow it to melt. Once the butter melts, turn down the heat to medium.
- Take a large bowl and whisk your eggs until light and fluffy. Then add cinnamon and salt to them. Next pour in the milk and beat the mixture well.
- Soak your bread in the mixture, one at a time and place them on the skillet.
- Cook one side until brown and then flip it to let the other side cook through.
- Serve hot with maple syrup or honey – whichever you prefer.
The Healthy Breakfast Burritos
Makes 2
What You Need
- Large eggs 2
- Milk 1 tablespoon
- Fresh chives 1 tablespoon (chopped)
- Butter 1 tablespoon
- Bacon slices 4 (cooked)
- Avocado 1 (thinly sliced)
- Cheddar ½ cup (shredded)
- Black beans ½ cup
- Kosher salt to taste
- Ground black pepper to taste
- Salsa for serving
How to Make It
- Take a bowl and whisk milk, eggs, and chive together. Add salt and pepper for seasoning.
- Melt butter in a non-stick skillet (large). Swirl around to completely coat the pan with butter.
- Add the egg mixture and swirl around again to spread the egg enough to cover the base of the pan. Cook for two minutes.
- Flip the eggs and cook for additional two minutes. Then transfer it to a plate.
- Layer the egg with black beans, bacon, cheddar, salsa, and avocado. Roll it up like a burrito and cut it into easy-to-manage portions. Serve.
The Berry Parfait
Makes 4
What You Need
- Greek yogurt 1 cup
- Honey 2 tablespoons
- Ground cinnamon ¼ teaspoon
- Medium banana 1 (sliced)
- Granola 1 cup
- Berries* 1 cup
*You can take any berries of your choice in fresh or frozen form.
How to Make It
- Take a bowl and mix honey, cinnamon, and Greek yogurt together. Stir in the sliced bananas.
- Take 8oz. glasses and layer 2 tablespoons of berries, 2 tablespoons of granola, and 3 tablespoons of yogurt mixture on top of each other.
- Repeat the process a second time, and serve.
