The Turkey Bomb Sandwiches
What You Need?
- Bread* 2 slices
- Cheddar cheese 1 slice
- Turkey (thinly sliced) 1½ ounce
- Thick-cut bacon (crisped) 1 slice
- Granny Smith apple (thinly sliced) ¼
- Caramelized onions 1 tablespoon
- Mayonnaise to taste
*You can choose white bread or brown as per your liking. We use the 12-grain bread for this recipe.
What to Do?
- Place the cheese on one bread slice and toast it in the oven until the cheese melts and changes color slightly.
- Spread mayonnaise on the other slice of bread.
- Layer the turkey, apple, bacon, and caramelized onions on the top of the mayonnaise bread.
- Now toast this layered bread in the oven till the bread browns and the ingredients on top of it are warm.
- Cover the layered toasted bread with the toasted cheese bread.
- Cut it into half and pack it for lunch.
Pasta Salad with Chicken & Salsa Hummus
What You Need?
- Chopped vegetables (cooked)* 1 cup
- Cubed chicken (cooked) ** ¾ cup
- Cubed avocado ½
- Elbow pasta 1 cup
- Salsa 2 tablespoons
- Hummus 2 tablespoons
*You could take any combination of vegetables you like. We prefer asparagus, carrots, and peas.
**You can fry, grill, or bake the chicken. Cook it anyway you like. We grilled ours with some basic seasoning of salt and pepper.
What to Do?
- Prepare your pasta as per the instructions on the packet.
- Combine the chicken, avocado, and the vegetables in a bowl and mix in the cooked pasta.
- Add the hummus and the salsa. Mix them well.
- Refrigerate the salad overnight to allow the flavors to set. If you’re cooking in the morning, allow the salad at least an hour in the refrigerator before you have it.
- Pack it for lunch and enjoy this delicious cold pasta salad with hummus and salsa.
